David Walford, Director of Operations

David Walford is a seasoned craftsman who has spent most of his life immersed in the culinary and dining world. Developing his love for classic food traditions and skillful French techniques he has trained with notable chefs in the Napa Valley and all over France.

A Colorado native, David’s home has been the Vail Valley for the last 43 years, where he cooked at the original Red Lion, was Executive Chef at Sweet Basil for 10 years and then spent 22 years as Owner-Chef of Splendido in Beaver Creek, making a name for himself and putting his refined cooking on the map.

Enthusiastic about creating good food and giving a memorable dining experience, David has brought his expertise to leading the teams at White Bison and sister restaurant, Fall Line Kitchen & Cocktails.

Jake Burkhardt,
Executive Chef

Growing up in Chattanooga, Tennessee, Chef Jake Burkhardt has always had a passion for cooking. Having the opportunity to be a part of an accelerated program that allowed him to study at three different locations throughout the United States, Burkhardt obtained a Bachelor’s Degree at Johnson & Whales University.

After completing school, Burkhardt held many positions at prominent restaurants in California, Las Vegas and most recently Aspen, Colorado when he was the Executive Chef at Aspen Kitchen. There he gained great knowledge of indigenous Rocky Mountain components and inspired seasonal ingredients. In 2016, he moved to Vail Valley and was named Executive Chef of White Bison and Fall Line Kitchen.

When Burkhardt is not in the kitchen, he enjoys playing with his 8 month old puppy, Bear. He takes advantage of Colorado’s great outdoors by camping, mountain biking, hiking and snowboarding in his spare time.
